How to cook simple instant fried dried noodles

Here is a very simple recipe on how to cook simple instant dried noodles. Lee Fah Mee is so far my favorite brand for dried noodles. Mee is also known as noodles locally.



Preparation time: 5minutes
Cooking time: 3 minutes (Soak in hot water), 5-8 minutes cooking time

Ingredients:
2 chicken frankfurters, sliced
1 chicken egg (optional)
1 shallot (red onion), thinly sliced
1 pip garlic, thinly sliced or finely chopped



Seasoning: (mix all in a sauce bowl)
Sweet soya sauce
Salty soya sauce
Oyster sauce*optional
Sesame oil*optional
Chicken stock (granules)
Salt & pepper

Method:
1. Boil hot water in a pot or jug kettle. Place dried noodles in a big bowl and pour hot water into the bowl and let the noodles soak in the hot water for about 3-5 minutes to loosen it. Do not soak it in hot water too long because the noodles will break and gets mushy when you cook it.

2. Once the noodles loosen, drain the hot water and wash the noodles under cold running water. (Just treat the noodles like cooking a packet of spaghetti, only difference is this one is soaked in boiling water, not boiling it in hot water on top of a stove). Set aside.

3.  Heat up your wok and add in cooking oil (i use corn/vegetable oil). You need a bit more oil when it comes to frying noodles. You don't want the noodles to stuck at the bottom of the wok and it gets tough and hard to clean. When oil is hot, add in shallots, garlic and sliced chicken frankfurters. Stir fry for about 1-2minutes. Control the heat, make sure the oil is not too hot that it burns the garlic and shallots once you put them in the wok.

4. Add in the seasoning. All seasoning ingredients are mixed into a small bowl. Be careful not to put too much salty soya sauce and also oyster sauce. Remember we need to put salt too. So, please adjust the saltiness according to your liking. Do not pour all the sauce in if you are uncertain of the saltiness level. I normally put a bit more than half the sauce into the wok and after i mix the noodles and the taste is still lacking, then I will pour a bit more of the sauce into the noodles.

5. Add water if necessary. After pouring the sauce into the wok, add the strained noodles and stir till the sauce is well mixed with the noodles. You might need a metal chopstick to help you mix the noodles better. Taste the noodles and see if it has enough seasoning. If not enough, use the leftover sauce in the sauce bowl to season.

6. Do not add water after the noodles are well mixed. Doing so might make the noodles mushy. Please use medium to low heat once the noodles are added into the wok.

7. Serve hot. If you like, make a hot sauce by thinly slicing chillies and add lemon juice plus salty soya sauce to eat with the noodles. Bon apetit~
